I know this sounds weird. But this will be a family favorite in no time. These enchiladas taste like a thick and creamy bowl of soup, in a tortilla. All in one skillet
- 3 table spoons of butter
- 3 tblespoons of all purpose flour
- 2 cups of chickem broth
- a pinch of kosher salt
- 1/4th a teaspoon of oregano
- 3 whole boneless chicken breasts halved
- 1 cup of sour cream
- 12 whole tortilas cut into bite sized pieces
- 2 cups of colby jack grated chese
- heat butter in a large skillet on medium heat. stir in flour for one minute, then add chicken broth. Continue stiring until it is mixed and thick.
- stir in spices, and add chicken to the pan, bring to a simmer, turn heat on low, cover and cook for 15 minutes or until chicken is cooked.
- Remove chicken from the pan, leave the heat on low, and shread the chicken over a plate.
- add sour cream into the sauce and add the chicken to the skillet. add chese and simmer for 5 minutes, Then put on tortillas and serve.
