Chicken Noodle Soup Enchiladas​

I know this sounds weird. But this will be a family favorite in no time. These enchiladas taste like a thick and creamy bowl of soup, in a tortilla. All in one skillet

  • 3 table spoons of butter
  • 3 tblespoons of all purpose flour
  • 2 cups of chickem broth
  • a pinch of kosher salt
  • 1/4th a teaspoon of oregano
  • 3 whole boneless chicken breasts halved
  • 1 cup of sour cream
  • 12 whole tortilas cut into bite sized pieces
  • 2 cups of colby jack grated chese
  1. heat butter in a large skillet on medium heat. stir in flour for one minute, then add chicken broth. Continue stiring until it is mixed and thick.
  2. stir in spices, and add chicken to the pan, bring to a simmer, turn heat on low, cover and cook for 15 minutes or until chicken is cooked.
  3. Remove chicken from the pan, leave the heat on low, and shread the chicken over a plate.
  4. add sour cream into the sauce and add the chicken to the skillet. add chese and simmer for 5 minutes, Then put on tortillas and serve.
